- 1/4 cup chopped onion
- 1 egg
- 1 tbsp tomato paste
- 1 tsp cumin
- 1/2 tsp chili powder
- Salt and pepper to taste

Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) and lightly grease a loaf pan or line it with parchment paper to prevent sticking and make cleanup easier.
- Combine Ingredients: In a large bowl, gently mix together the ground beef, ground pork (if using), taco seasoning, crushed tortilla chips, salsa, shredded cheddar cheese, chopped onion, egg, tomato paste, cumin, chili powder, salt, and pepper. Mix just until combined to keep the meatloaf tender—avoid overmixing.
- Shape Meatloaf: Transfer the meat mixture into the prepared loaf pan and shape it evenly into a loaf shape to ensure uniform cooking.
- Bake: Place the loaf pan in the oven and bake for 45–50 minutes, or until the internal temperature reaches 160°F (71°C), confirming it is fully cooked and safe to eat.
- Add Toppings: During the last 5 minutes of baking, spread extra salsa on top of the meatloaf and sprinkle with additional shredded cheddar cheese if desired. This adds a melty, flavorful topping.
