Instructions
- Prepare Chia Pudding Base: In a medium bowl, whisk together coconut milk, chia seeds, maple syrup, and vanilla extract until well combined. Let the mixture sit for 5 minutes, then whisk again to break up any clumps of chia seeds. Cover the bowl and refrigerate for at least 2 hours or until the mixture thickens to a pudding consistency.
- Make Raspberry Purée: Place raspberries and maple syrup in a blender or food processor and blend until completely smooth. Taste and adjust the sweetness by adding more maple syrup if needed. For a smoother, seedless texture, strain the purée through a fine mesh sieve.
