Bananas
- 4 bananas
- 2 tablespoons lemon juice
Cream Mixture
- 400 ml oat whipping cream (chilled)
- 60 g powdered sugar (confectioner’s sugar/icing sugar) (*see notes)
- 200 g vegan cream cheese
- ½ teaspoon ground turmeric (optional)
Coconut Custard
- 400 g coconut custard
Additional Banana and Cream
- 1 banana
- 400 ml oat whipping cream (chilled)
Instructions
- Make the vegan vanilla wafers: Prepare half a batch of vegan vanilla wafers or substitute them with graham crackers, digestives, or gingersnaps as preferred, setting them aside for assembling the pudding.
- Prepare the custard filling: Pour the chilled oat whipping cream into a large mixing bowl and whisk vigorously for 2-3 minutes until the cream becomes light and fluffy. Gradually whisk in the powdered sugar, then add the vegan cream cheese and continue whisking until the mixture is smooth and well combined. Optionally stir in the ground turmeric for a subtle color and flavor enhancement.
- Combine with coconut custard: Gently fold the coconut custard into the whipped cream mixture, careful not to deflate the airiness. Once combined, cover the bowl and refrigerate until ready to assemble the pudding.
- Prepare the bananas: Slice all four bananas into coin shapes and place them in a bowl. Add the lemon juice and toss the slices gently to evenly coat, which helps prevent browning and adds a fresh citrus note.
Notes
- The powdered sugar can be adjusted to taste if you prefer a less sweet pudding.
- Ground turmeric is optional but adds a natural yellow tint and subtle flavor that mimics traditional custard color.
