Description

This Tzatziki Chicken Salad is a refreshing and flavorful Mediterranean-inspired dish combining creamy Greek yogurt, crunchy vegetables, tender chicken, and zesty seasonings. It’s perfect for a light lunch or a healthy dinner with vibrant colors and a delightful mix of textures.

Ingredients

Scale

Dressing and Base

  • 1 cup plus 2 Tbsp plain Greek yogurt
  • ½ cucumber, grated
  • 2 to 3 garlic cloves, pressed
  • 2 Tbsp olive oil
  • 2 Tbsp chopped fresh dill
  • Salt and pepper, to taste

Salad

  • 2 cups chopped cooked chicken
  • 2 cups chopped romaine lettuce
  • 1 cup halved grape tomatoes
  • ½ cup sliced pepperoncini peppers
  • ½ cup sliced Kalamata olives
  • ¼ cup chopped red onion
  • ½ cup crumbled feta cheese

Instructions

  1. Prepare Cucumber: Squeeze the water from the grated cucumber thoroughly to avoid a watery salad and create the perfect creamy texture for the tzatziki base.
  2. Make Tzatziki Dressing: In a bowl, combine the Greek yogurt, grated and squeezed cucumber, pressed garlic cloves, olive oil, and chopped fresh dill. Season this mixture with salt and pepper to your taste, mixing well to blend all the flavors.
  3. Assemble Salad: Gently fold in the chopped cooked chicken, chopped romaine lettuce, halved grape tomatoes, sliced pepperoncini peppers, sliced Kalamata olives, chopped red onion, and crumbled feta cheese into the tzatziki dressing until everything is well coated and evenly distributed.

Notes

  • For best results, use plain full-fat Greek yogurt for creaminess and flavor.
  • Squeezing out excess water from the cucumber is crucial to prevent soggy salad.
  • This salad can be served immediately or chilled for 30 minutes to enhance the flavors.
  • Feel free to adjust the garlic amount based on your preference for pungency.
  • Leftover salad can be refrigerated for up to 2 days in an airtight container.
