Instructions

  1. Prepare Tuna Steaks: Pat the tuna steaks dry with paper towels to remove excess moisture. Season both sides generously with salt, black pepper, and paprika to infuse flavor evenly.
  2. Sear Tuna: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat until hot. Carefully place the tuna steaks in the skillet and sear each side for 2 to 3 minutes for medium-rare doneness, or cook longer if preferred. Remove the tuna from the skillet and let it rest to retain juices.
  3. Make Garlic Sauce: Reduce heat to medium in the same skillet, add 2 tablespoons of unsalted butter, and let it melt. Stir in minced garlic and cook for about 30 seconds until fragrant but not browned. Pour in 1/2 cup heavy cream and bring to a gentle simmer, stirring occasionally. Mix in 1/4 cup grated Parmesan cheese and cook for an additional 2 to 3 minutes until the sauce thickens slightly. Stir in 1 tablespoon lemon juice and 1 tablespoon chopped fresh parsley.
