Ingredients
Scale
Wet Ingredients
- 1/2 cup unsalted butter
- 1/2 cup milk
- 1/2 cup peanut butter
- 1 tsp vanilla extract
Dry Ingredients
- 1 1/2 cups granulated sugar
- 1/4 cup cocoa powder
- 3 cups quick oats (rolled oats can also be used)
- Pinch of salt (optional)
Instructions
- Combine and Boil: In a medium saucepan, combine the butter, milk, sugar, and cocoa powder. Bring the mixture to a boil over medium heat, stirring frequently to prevent burning.
- Boil Briefly: Once the mixture reaches a rolling boil, allow it to boil uninterrupted for 1 minute to properly activate the ingredients for setting.
- Add Peanut Butter and Vanilla: Remove from heat immediately and stir in the peanut butter and vanilla extract until the mixture is smooth and fully combined.
- Incorporate Oats: Stir in the oats thoroughly until the mixture coats all the oats evenly.
- Form Cookies: Drop spoonfuls of the mixture onto wax paper or parchment paper, shaping into small mounds for cookies.
- Set Cookies: Let the cookies cool at room temperature for at least 30 minutes, allowing them to harden and hold their shape.
- Serve and Store: Enjoy immediately once set, or store in an airtight container at room temperature for up to one week.
Notes
- Use quick oats for the best texture, but rolled oats work if preferred.
- A pinch of salt is optional but enhances the flavor balance.
- Ensure to boil the mixture for a full minute to ensure cookies set properly.
- These cookies do not require baking, making them perfect for warm climates or quick treats.
- Store cookies at room temperature to maintain texture; refrigeration may harden them too much.
