Butter and Sweeteners
- 100 grams softened unsalted butter
- 75 grams soft light brown sugar
- 2 tablespoons golden syrup
Dry Ingredients
- 150 grams self-rising flour
- 30 grams cocoa powder
- 1.5 teaspoons cornflour
Chocolate and Flavoring
- 2 Terry’s Chocolate Orange bars (chopped, except for 12 segments reserved for topping)
- 1 teaspoon orange extract or zest of 1 orange
Additional
- 1-2 tablespoons milk (to loosen mixture if needed)
Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 180°C (350°F) standard or 160°C (320°F) fan-assisted. Grease and line an 8×8 inch baking tin with parchment paper to prevent sticking and ensure easy removal of the cookies.
- Chop Chocolate Orange Bars: Chop all but 12 segments of the Terry’s Chocolate Orange bars into small chunks that will be mixed into the cookie dough. Keep 12 full segments aside to press on top later.
- Cream Butter and Sugar: Beat the softened unsalted butter until soft and creamy. Add the soft light brown sugar and continue beating until the mixture is light and fluffy, creating a smooth base for the dough.
- Combine Dry Ingredients and Flavorings: Stir in the golden syrup followed by the self-rising flour, cocoa powder, and cornflour. Add the chopped Terry’s Chocolate Orange pieces and orange extract or zest. Mix everything until a thick dough forms, adding 1-2 tablespoons of milk to loosen the dough if it feels too stiff.
- Shape and Bake Cookies: Spoon even amounts of the cookie mixture onto the prepared baking tray, spacing them well. Bake in the preheated oven for 10 minutes. Remove the tray and quickly press one reserved Terry’s Chocolate Orange segment onto the top of each cookie, then return to bake for a further 3 minutes to set the topping and finish baking the cookies.
- Cool the Cookies: Allow the cookies to cool on the baking tray for a couple of minutes to firm up. Then transfer them to a wire cooling rack to cool completely before serving or storing.
Notes
- For a stronger orange flavor, use freshly grated orange zest instead of orange extract.
- If the dough is too sticky, chill for 15 minutes before baking to make handling easier.
