- 1 inch ginger, minced
- 3/4 cup sweet chili sauce
- 1–2 Tbsp honey
- 1 lime, sliced
- 3 Tbsp green onions, chopped
- Sliced bell peppers and jalapeños (quantity as desired)
Instructions
- Preheat Oven: Preheat your oven to 375ºF (190ºC) to prepare for baking the chicken and vegetables.
- Season Chicken: Cube the chicken breasts into 1-inch pieces. Toss them in a bowl with corn starch, black pepper, salt, and red pepper to evenly coat and season the chicken.
- Bake Chicken and Vegetables: Spread the seasoned chicken pieces on a baking sheet along with sliced bell peppers and jalapeños. Bake in the oven for 20 minutes, flipping the chicken halfway through to ensure even cooking and browning.
- Prepare Sauce: While the chicken bakes, melt the butter in a saucepan over medium heat. Add minced garlic and ginger and sauté until fragrant, about 1-2 minutes. Stir in the sweet chili sauce and honey, and let it simmer for a few minutes to blend the flavors.
