- 1 bell pepper, chopped
- 1 (14.5-ounce) can diced tomatoes
- 1 (15-ounce) can kidney beans, drained and rinsed
- 1 (15-ounce) can black beans, drained and rinsed
- 2 tablespoons tomato paste
- 1 cup beef or chicken broth
Spices and Seasonings
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
Garnish
- Shredded cheddar cheese
- Chopped green onions
Instructions
- Brown the Beef: Heat olive oil in a large pot over medium-high heat. Add ground beef and cook until browned, breaking it up with a spoon, about 5 minutes. Remove excess fat if necessary.
- Sauté Vegetables: Add chopped onion, minced garlic, and bell pepper to the pot. Sauté until softened, about 3-4 minutes, stirring occasionally.
- Add Spices: Stir in chili powder, ground cumin, smoked paprika, salt, black pepper, and cayenne pepper if using. Cook for 1 minute to release the flavors of the spices.
- Combine Base Ingredients: Add diced tomatoes, tomato paste, beef or chicken broth, kidney beans, and black beans to the pot. Stir everything together thoroughly.
- Simmer the Chili: Bring the mixture to a simmer. Reduce heat to medium-low and cook uncovered for 15 minutes, stirring occasionally until the chili thickens.
- Adjust Seasonings and Serve: Taste the chili and adjust seasonings as needed. Serve hot, garnished with shredded cheddar cheese and chopped green onions.
Notes
- For extra depth of flavor, simmer chili for a few minutes longer to let flavors meld.
- Swap ground turkey or chicken for ground beef to make it a leaner option.
- Adding corn or diced jalapeños can enhance the texture and add extra flavor.
