Instructions

  1. Make the Crust: Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, sugar, melted butter, and vanilla extract. Mix well until the crumbs are evenly coated. Press the mixture firmly into the bottom of a greased 9×9-inch baking dish to form an even crust. Bake this crust for 10 minutes, then remove from the oven and allow it to cool completely.
  2. Prepare the Chocolate Layer: In a small saucepan, gently heat 1 cup of heavy cream over medium heat until it begins to simmer. Remove from heat and immediately add the semi-sweet chocolate chips. Stir continuously until the chocolate is fully melted and the mixture is smooth. Stir in 1 teaspoon of vanilla extract for added flavor. Pour this warm chocolate ganache over the cooled crust, spreading it evenly with a spatula. Place the dish in the refrigerator for 30 minutes to help the chocolate layer set.
  3. Make the Pistachio Layer: In a mixing bowl, whisk together the instant pistachio pudding mix, 2 cups of heavy cream, and ½ cup milk. Continue mixing until the pudding thickens to a creamy consistency. Spread this pistachio pudding layer evenly over the chilled chocolate layer.
