Shrimp Tacos

- 8 small corn or flour tortillas
- 1 cup shredded red cabbage

Mango Salsa
- 1 ripe mango, diced
- 1/4 red onion, finely chopped
- 1/2 red bell pepper, diced
- 1 small jalapeño, seeded and minced
- 2 tablespoons chopped fresh cilantro
- Juice of 1 lime
- Salt to taste
Instructions
- Season the Shrimp: In a medium bowl, toss the peeled and deveined shrimp with olive oil, chili powder, smoked paprika, cayenne pepper (if using), salt, and black pepper until evenly coated.
- Cook the Shrimp: Heat a large skillet over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes per side, until they turn pink and are cooked through. Remove from heat and set aside.
- Prepare the Mango Salsa: In a separate bowl, combine diced mango, finely chopped red onion, diced red bell pepper, minced jalapeño, chopped cilantro, lime juice, and a pinch of salt. Mix well to blend flavors.
- Warm the Tortillas: Heat the tortillas in a dry skillet over medium heat for about 30 seconds per side or warm them in the microwave until pliable.
- Assemble the Tacos: Lay tortillas on a plate and layer each with shredded red cabbage, cooked shrimp, and a generous spoonful of mango salsa. Garnish with extra fresh cilantro and serve with lime wedges on the side for squeezing.
