Instructions

  1. Prepare Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent them from burning during grilling.
  2. Make Marinade: In a bowl, whisk together creamy peanut butter, soy sauce, lime juice, brown sugar, sriracha, minced garlic, grated ginger, vegetable oil, ground coriander, ground cumin, and water until the mixture is smooth and well combined.
  3. Reserve Marinade: Set aside 3 tablespoons of the prepared marinade to use for basting the chicken later during cooking.
  4. Marinate Chicken: Add the chicken cubes to the remaining marinade. Toss thoroughly to coat every piece evenly. Cover the bowl and refrigerate for at least 1 hour to let the flavors penetrate the meat.
