- 1 cup sharp cheddar cheese, shredded

- 1/4 cup fresh cilantro, chopped
- 1 tsp cumin

Instructions
- Brown the Meat. In a large skillet over medium heat, cook the ground beef and chorizo until fully browned and cooked through, about 8 minutes. Drain off any excess grease to keep the dip from becoming too oily.
- Sauté the Vegetables. Add the finely chopped onion, diced red bell pepper, and seeded jalapeños to the skillet with the meat. Cook for 5 minutes until the vegetables soften and release their flavors.
- Melt the Cheeses. Reduce the heat to low. Add Velveeta cubes, shredded sharp cheddar, shredded Monterey Jack, undrained diced tomatoes with green chiles, and milk to the skillet. Stir continuously until all the cheese has melted and the mixture is fully smooth and creamy.
- Season the Queso. Stir in cumin, salt, and pepper to taste. Adjust seasoning to your preference for a balanced, spicy flavor.
- Add Cilantro and Serve. Just before serving, fold in the chopped fresh cilantro to add a fresh, herbaceous finish to the warm, spicy queso dip.
