Meat Sauce

  • 1 tablespoon olive oil
  • 1 pound ground beef

  • 1 can (15 ounces) black beans, rinsed and drained

  • 1 cup water
  • 1/2 teaspoon salt

Lasagna

  • 8 to 10 lasagna noodles
  • 1 1/2 cups sour cream
  • 2 cups shredded Mexican blend cheese, divided
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro


Instructions

  1. Preheat and Prepare Baking Dish: Preheat the oven to 375 degrees Fahrenheit and lightly grease a 9×13-inch baking dish to prevent sticking during baking.
  2. Cook Ground Beef: Heat the olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, breaking it into small pieces as it cooks. Drain any excess fat to keep the dish from becoming greasy.
  3. Sauté Aromatics and Season: Add the finely chopped onion to the skillet and cook for 3 to 4 minutes until softened. Stir in the minced garlic and cook for about 30 seconds until fragrant.
  4. Make Meat Sauce: Stir in the taco seasoning, drained diced tomatoes with green chilies, rinsed black beans, corn kernels, salsa, water, salt, and black pepper. Bring the mixture to a gentle simmer and cook for 5 to 7 minutes to blend the flavors thoroughly.
