Pita Breads
- 12 mini pita breads
- 2 tbsp olive oil (for brushing)
- 1/2 tsp sea salt
Fresh Vegetable Fillings
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red bell pepper, finely diced
- 1/2 cup shredded romaine lettuce
- 1/4 cup red onion, thinly sliced
- 1/4 cup feta cheese, crumbled (optional)
- 2 tbsp fresh parsley, chopped
Hummus Varieties and Garnishes
- 1 cup classic hummus
- 1 cup roasted red pepper hummus
- 1 cup garlic or lemon herb hummus
- 2 tsp olive oil (for drizzling)
- 1/2 tsp smoked paprika (for garnish)
- 1 tbsp fresh herbs (parsley or cilantro), chopped
Instructions
- Warm the Pita Breads: Preheat your oven to 350°F (175°C). Lightly brush each mini pita bread with olive oil and sprinkle with sea salt. Place them on a baking sheet and warm in the oven for 5 to 7 minutes until the pitas are soft and heated through.
- Prepare Fresh Fillings: While the pitas warm, wash and prepare your fresh vegetables. Halve the cherry tomatoes, dice the cucumber, finely dice the red bell pepper, shred the romaine lettuce, and thinly slice the red onion. Crumble the feta cheese if using, and chop the fresh parsley. Arrange each ingredient in separate small bowls or on a serving platter for easy access.
- Assemble Hummus Bowls: Spoon each variety of hummus—classic, roasted red pepper, and garlic or lemon herb—into individual small serving bowls. Drizzle each with a little olive oil, sprinkle with smoked paprika, and garnish with fresh chopped herbs to add color and flavor.
- Serve and Assemble: Remove the warmed pita breads from the oven and slice each one in half to form mini pockets. Invite guests or diners to fill their pita pockets with their choice of fresh vegetables, optional feta cheese, and herbs, then dip or layer with their preferred hummus flavors, creating a customizable and interactive meal experience.
