Ingredients
Scale
Main Ingredients
- 1 tablespoon olive oil
- 1 pound smoked sausage, sliced into rounds
- 1 pound baby potatoes, halved or quartered
- 1 pound fresh green beans, trimmed
- 1 small onion, sliced
- 2 cloves garlic, minced
- ½ teaspoon smoked paprika
- Salt and black pepper to taste
- ¼ cup water or chicken broth
- Chopped parsley for garnish (optional)
Instructions
- Brown the Sausage: In a large skillet, heat the olive oil over medium heat. Add the sliced smoked sausage and cook until nicely browned, about 4 to 5 minutes. Once browned, remove the sausage from the skillet and set aside to keep warm.
- Cook the Potatoes: Using the same skillet, add the halved or quartered baby potatoes. Cook them for 8 to 10 minutes, stirring occasionally, until they begin to soften and develop a golden brown color.
- Add the Onions: Add the sliced onion to the skillet with the potatoes and sauté for an additional 2 to 3 minutes until the onions start to soften.
- Incorporate Garlic, Green Beans, and Seasonings: Stir in the minced garlic, fresh green beans, smoked paprika, salt, and black pepper. Mix everything well to combine.
- Steam the Vegetables: Pour in ¼ cup of water or chicken broth, then cover the skillet with a lid. Let the potatoes and green beans steam for about 7 to 10 minutes, or until the potatoes are fork-tender and the green beans are crisp-tender.
- Reintroduce the Sausage: Remove the lid and return the browned sausage to the skillet. Stir everything together thoroughly.
- Finish Cooking: Cook uncovered for another 2 to 3 minutes on medium heat to let the flavors meld and any remaining liquid evaporate.
- Garnish and Serve: Optionally, sprinkle chopped fresh parsley over the dish before serving for a burst of color and freshness.
Notes
- You can parboil the potatoes beforehand to reduce cooking time significantly.
- Kielbasa or turkey sausage are excellent alternative options to smoked sausage if preferred.
- Use chicken broth instead of water to add extra depth of flavor.
- Adjust smoked paprika and seasoning according to taste for a spicier or milder dish.
