Instructions

  1. Preheat Oven: Preheat your oven to 400ºF (200ºC) and line two baking sheets with parchment paper for easy cleanup and even baking.
  2. Scramble Eggs: In a skillet over medium heat, scramble the 7 eggs until fully cooked but still moist. Remove from heat and set aside to cool slightly.
  3. Prepare Pastry Squares: Unfold both sheets of the thawed puff pastry. Cut each sheet into 9 equal squares, giving you a total of 18 squares to use as the base for your breakfast puffs.
  4. Assemble Puffs: On each pastry square, place a diagonal line of scrambled eggs down the center. Top with one uncooked breakfast sausage link, and then sprinkle with shredded cheddar cheese. Fold two opposite corners of each pastry square over the filling and press the edges firmly to seal, forming a neat pouch. Place each puff on the prepared baking sheet, spaced evenly.
