Description

These Sausage Cranberry Brie Bites are a delightful appetizer combining savory breakfast sausage, creamy brie, and sweet-tart cranberry sauce all nestled in flaky puff pastry. Perfect for holiday parties or any gathering, these bite-sized treats offer a burst of flavor and a lovely balance of textures in every bite.

Ingredients

Scale

Puff Pastry Base

  • 1 package (17.3 oz) frozen puff pastry sheets, thawed

Filling

  • 8 oz breakfast sausage (mild or sage flavored)
  • 6 oz brie cheese, cut into small cubes
  • ½ cup whole berry cranberry sauce
  • 2 tablespoons fresh rosemary, finely chopped
  • Pinch of black pepper

Finishing

  • 1 egg, beaten (for egg wash)

Instructions

  1. Prepare the Sausage: Cook the breakfast sausage in a skillet over medium heat until fully browned and cooked through. Drain excess fat and set aside to cool slightly.
  2. Prepare the Puff Pastry: Thaw the puff pastry sheets at room temperature until pliable. Roll out the pastry gently on a lightly floured surface to smooth any creases.
  3. Spread the Cranberry Sauce: Evenly spread the whole berry cranberry sauce over the entire surface of the puff pastry, leaving a 1/2-inch border along the top edge free of sauce to allow sealing.
  4. Add Sausage and Cheese Layers: Sprinkle the cooked sausage evenly over the cranberry sauce layer. Top with small cubes of brie cheese, spreading them evenly to cover the sausage.
  5. Season: Sprinkle the finely chopped fresh rosemary and a pinch of black pepper evenly over the layered ingredients to enhance flavor.
  6. Cut and Assemble Bites: Cut the puff pastry layered mixture into bite-sized squares or rectangles. Fold or pinch edges if needed to secure fillings inside each bite.
  7. Apply Egg Wash: Brush the beaten egg gently over the tops and edges of each pastry bite to promote a golden, glossy finish during baking.
  8. Bake: Preheat the oven to 375°F (190°C). Place the bites on a parchment-lined baking sheet. Bake for 20-25 minutes or until the pastry is puffed, golden, and cooked through.
  9. Cool and Serve: Allow the bites to cool for 5 minutes before serving. Enjoy warm for the best texture and flavor.

Notes

  • Use turkey sausage or plant-based sausage as a lighter or vegetarian alternative.
  • Swap cranberry sauce with fig jam or apricot preserves for a different fruity flavor.
  • Replace brie with camembert or cream cheese to vary the creamy cheese profile.
  • Use gluten-free puff pastry for guests with gluten sensitivities.
