Description

A hearty and comforting Sauerkraut Casserole featuring savory ground beef, tangy sauerkraut, and melted sharp cheddar cheese, baked to golden perfection. This delicious casserole offers a creamy texture with a smoky and savory flavor profile, perfect for a satisfying dinner.

Ingredients

Scale

Main Ingredients

  • 1 pound ground beef
  • 2 cups sauerkraut, drained
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup diced onions
  • 2 cloves garlic, minced

Dairy Ingredients

  • 1/2 cup sour cream or Greek yogurt
  • 1/4 cup cream cheese, softened

Seasonings & Oils

  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon ground black pepper
  • Salt to taste
  • 1 tablespoon olive oil
  • Optional: 1/2 teaspoon caraway seeds for authentic flavor

Instructions

  1. Sauté Aromatics and Brown Beef: Heat olive oil in a skillet over medium heat. Add diced onions and minced garlic, sautéing until fragrant and translucent. Then add the ground beef, cooking until fully browned. Drain any excess fat from the skillet.
  2. Add Sauerkraut and Creamy Ingredients: Stir in drained sauerkraut, sour cream or Greek yogurt, softened cream cheese, smoked paprika, ground black pepper, and salt. Mix thoroughly and cook until the mixture is heated through and reaches a creamy consistency. Optionally, add caraway seeds for extra flavor.
  3. Prepare Casserole Dish: Grease a casserole dish lightly and transfer the beef and sauerkraut mixture evenly into it. Then sprinkle the shredded sharp cheddar cheese evenly on top.
  4. Bake: Preheat the oven to 375°F (190°C). Bake the casserole uncovered for 20 to 25 minutes, or until the cheese is melted, bubbly, and golden brown.
  5. Serve: Allow the casserole to cool slightly before serving. Garnish with fresh herbs if desired for an added touch of flavor and color.

Notes

  • For authentic flavor, consider adding 1/2 teaspoon of caraway seeds to the mixture.
  • Sour cream can be substituted with Greek yogurt for a tangier taste and healthier option.
  • Drain sauerkraut well to avoid excess moisture in the casserole.
  • This casserole can be prepared in advance and reheated before serving.
  • To make this recipe lower in fat, use lean ground beef or substitute with ground turkey.
