  • 1 package (3.4 ounces) instant vanilla pudding mix

Instructions

  1. Prepare the crust: Preheat the oven to 350°F (175°C). In a bowl, combine the crushed cornflakes, sugar, and melted butter. Press this mixture evenly into a greased 9-inch square baking dish. Bake for 10 minutes until set and golden. Remove from oven and cool on a wire rack.
  2. Cook the pineapple topping: In a saucepan, combine the cornstarch and undrained crushed pineapple. Stir until well blended. Bring the mixture to a boil over medium heat, stirring constantly. Cook and stir for about 2 minutes or until the mixture thickens. Remove from heat and let it cool completely.
  3. Make the creamy layer: In a mixing bowl, beat the softened vanilla ice cream with the instant vanilla pudding mix at low speed for about 2 minutes until well blended and thickened.
  4. Assemble the dessert: Spoon the vanilla ice cream and pudding mixture evenly over the cooled cornflake crust. Then spread the cooled pineapple mixture on top of this layer. Refrigerate the assembled dessert until ready to serve.
