Ingredients
Scale
Cream Cheese Layer
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 4 oz Cool Whip (half of a small tub, thawed)
Pecan Topping
- 3 tbsp unsalted butter, cold and cut into small pieces
- â…“ cup light corn syrup
- ½ cup brown sugar, packed
- 1 tsp vanilla extract
- 1 cup pecans, chopped or halved
- 1 egg, lightly beaten
- A pinch of salt
For Serving
- Fresh fruit (e.g., apple slices)
- Graham crackers, plain pita chips, or your favorite dippers
Instructions
- Make the Cream Cheese Layer: Soften the cream cheese by microwaving for 15–20 seconds if needed. Beat it with an electric mixer until smooth, then gradually add the powdered sugar, mixing until fully combined. Gently fold in the Cool Whip until the mixture is fluffy. Spread this mixture evenly in a pie plate or serving dish, then chill it in the refrigerator while preparing the topping.
- Make the Pecan Topping: In a medium saucepan over medium heat, melt the butter along with the brown sugar, corn syrup, and a pinch of salt, stirring constantly. Once melted, bring the mixture to a gentle simmer. Slowly drizzle in the beaten egg while stirring continuously to prevent it from scrambling. Cook for about 1 minute until the mixture thickens. Remove from heat and stir in the vanilla extract and pecans. Let it cool for 10 minutes to slightly thicken.
- Assemble and Serve: Remove the cream cheese layer from the refrigerator and pour the slightly cooled pecan topping over it, spreading evenly. Serve immediately while the topping is warm, or refrigerate until ready to serve. Pair with fresh fruit, graham crackers, or your favorite dippers.
Notes
- Be careful to add the beaten egg slowly and stir constantly when making the pecan topping to prevent scrambling.
- The dip can be served warm or chilled, depending on your preference.
- Use fresh fruit like apple slices for a fresh contrast or graham crackers for a classic pairing.
- To soften cream cheese quickly, microwave in short bursts to avoid overheating.
- Storing leftovers covered in the refrigerator can keep the dip fresh for up to 2 days.
