Description

This Parmesan Crusted Chicken recipe features tender, juicy chicken breasts coated in a crispy, flavorful crust made from Parmesan cheese, panko breadcrumbs, and savory spices. Baked to golden perfection, it makes a quick and elegant meal perfect for weeknight dinners or special occasions.

Ingredients

Scale

Chicken:

  • 2 large chicken breasts (boneless, skinless)

Coating:

  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs (panko preferred)
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Garnish:

  • Fresh parsley (optional)

Instructions

  1. Prepare the Chicken: Preheat your oven to 400°F (200°C). Pat the chicken breasts dry thoroughly with a paper towel to help achieve a crispy crust. If the breasts are unevenly thick, butterfly or pound them to an even thickness to ensure even cooking.
  2. Create the Coating: In a shallow bowl, whisk the eggs together with a pinch of salt and pepper. In a separate bowl, mix the grated Parmesan cheese, panko breadcrumbs, garlic powder, and onion powder to combine the flavorful coating.
  3. Dredge the Chicken: Dip each chicken breast into the egg mixture ensuring full coverage. Transfer it immediately to the breadcrumb and Parmesan mixture, firmly pressing the coating onto the chicken to form a thick, crunchy crust.
  4. Bake to Perfection: Place the coated chicken breasts on a greased baking sheet or one lined with parchment paper. Bake in the preheated oven for about 20 minutes or until the chicken reaches an internal temperature of 165°F (75°C) and the crust is golden brown and crispy.
  5. Serve and Enjoy: Remove the chicken from the oven and let it rest for a few minutes to retain juices. Garnish with chopped fresh parsley for color and freshness. Serve alongside your favorite sides such as roasted vegetables or a fresh salad.

Notes

  • For more even cooking, butterflying or pounding chicken breasts to uniform thickness is recommended.
  • Panko breadcrumbs provide extra crunch but regular breadcrumbs can also be used.
  • Ensure chicken is cooked to a safe internal temperature of 165°F (75°C) to avoid undercooking.
  • Fresh parsley is optional but adds a nice visual touch and fresh flavor.
  • To make this recipe gluten-free, substitute breadcrumbs with gluten-free alternatives.
