Biscuit Base
- 200g digestive biscuits (or plain biscuits), crushed
- 1/2 cup unsalted butter, melted
- 1/4 cup honey or maple syrup
Tea & Mint Mixture
- 2 Earl Grey tea bags
- 1/2 cup boiling water
- 1/2 tsp fresh mint extract (or 1 tbsp finely chopped fresh mint leaves)
White Chocolate Topping
- 200g white chocolate, chopped
- 1/4 cup double cream (heavy cream)
- 1/4 tsp vanilla extract
- A pinch of salt
Instructions
- Prepare the Tea Mixture: Brew the Earl Grey tea by steeping the tea bags in 1/2 cup boiling water for 5-7 minutes. Remove and discard the tea bags, then allow the tea to cool slightly.
- Prepare the Biscuit Base: Crush the digestive biscuits into small pieces in a large bowl. In another bowl, mix the melted butter with honey or maple syrup. Pour this mixture over the crushed biscuits and stir to coat evenly.
- Add Mint Flavor: Stir fresh mint extract or chopped fresh mint into the cooled Earl Grey tea. Pour this mixture into the biscuit mixture and combine thoroughly to ensure even flavor distribution.
- Press the Base into the Pan: Line an 8×8-inch square pan with parchment paper. Press the biscuit mixture firmly and evenly into the bottom. Place in the refrigerator to chill while preparing the topping.
- Make the White Chocolate Mint Topping: Heat the double cream in a small saucepan over medium heat until it just begins to simmer. Remove from heat, then stir in the chopped white chocolate until melted and smooth. Add vanilla extract and a pinch of salt, stirring to combine.
- Assemble the Slice: Pour the white chocolate topping evenly over the chilled biscuit base. Use a spatula to spread it smoothly.
