Tea & Mint Mixture

  • 2 Earl Grey tea bags
  • 1/2 cup boiling water
  • 1/2 tsp fresh mint extract (or 1 tbsp finely chopped fresh mint leaves)

White Chocolate Topping

  • 200g white chocolate, chopped
  • 1/4 cup double cream (heavy cream)
  • 1/4 tsp vanilla extract
  • A pinch of salt


Instructions

  1. Prepare the Tea Mixture: Brew the Earl Grey tea by steeping the tea bags in 1/2 cup boiling water for 5-7 minutes. Remove and discard the tea bags, then allow the tea to cool slightly.
  2. Prepare the Biscuit Base: Crush the digestive biscuits into small pieces in a large bowl. In another bowl, mix the melted butter with honey or maple syrup. Pour this mixture over the crushed biscuits and stir to coat evenly.
