Instructions

  1. Season the chicken: In a bowl, season the bite-sized chicken pieces with salt, black pepper, paprika, and onion powder to evenly coat them with flavor.
  2. Cook the chicken: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken pieces and cook for 5–7 minutes, turning occasionally until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. Sauté mushrooms: In the same skillet, add the remaining 1 tablespoon of olive oil and the sliced mushrooms. Cook for 5–6 minutes, stirring occasionally, until the mushrooms are browned and have released their moisture.
  4. Add garlic and thyme: Stir in the minced garlic and thyme leaves, cooking for an additional 1 minute until fragrant.
  5. Deglaze the pan: Add the butter and chicken broth to the skillet, stirring to deglaze by scraping up any flavorful bits stuck to the bottom.
  6. Combine and simmer: Return the cooked chicken to the skillet, toss everything together to coat in the sauce, and simmer for 2–3 minutes to blend the flavors.
  7. Garnish and serve: Sprinkle chopped parsley over the top if desired and serve the mushroom chicken bites warm as an appetizer or main dish.
