Ingredients
Scale
Main Ingredients
- 200 g seitan, sliced into strips
- 250 g fresh mushrooms, sliced
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 1 tbsp Dijon mustard
- 1 tsp sweet paprika
- 200 ml plant-based cream (soy, oat, or unsweetened coconut)
- 1 tbsp soy sauce
- 1 tbsp olive oil
- Salt and black pepper to taste
Garnish and Serving
- Fresh parsley, chopped (optional)
- Pasta, rice, or mashed potatoes for serving
Instructions
- Prepare the base: Heat olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, sautéing until they become soft and translucent, releasing their aroma.
- Cook the mushrooms: Add the sliced mushrooms to the skillet and cook until they are browned and tender, which brings out their earthy flavors, about 5-7 minutes.
- Add seitan: Stir in the sliced seitan strips and cook together with the mushrooms for an additional 3 minutes, allowing the seitan to absorb the flavors.
- Season the stroganoff: Mix in the Dijon mustard, soy sauce, sweet paprika, salt, and black pepper. Stir everything well to combine all the spices evenly throughout the mixture.
- Add cream and simmer: Pour in the plant-based cream and reduce heat slightly. Let the stroganoff simmer gently for 5 to 7 minutes until the sauce thickens and becomes creamy, stirring occasionally to prevent sticking.
- Serve and garnish: Remove from heat and serve the stroganoff hot over cooked pasta, rice, or mashed potatoes. Garnish with freshly chopped parsley if desired for a pop of color and freshness.
Notes
- You can use soy, oat, or unsweetened coconut-based cream depending on your preference for flavor and creaminess.
- Adjust the seasoning with more salt, pepper, or paprika to taste.
- For a gluten-free option, substitute seitan with a gluten-free plant-based protein or extra mushrooms.
- Serving suggestions include wide egg noodles, brown rice, or creamy mashed potatoes to complement the rich sauce.
- Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat gently on the stovetop.
