Ingredients

Scale

Base and Toppings

  • 6 medium flour tortillas
  • 15 ounces refried beans
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons oil, divided
  • 12 ounces ground beef
  • 1 tablespoon taco seasoning
  • 1/2 cup enchilada sauce
  • 1 cup mozzarella cheese
  • 1 cup Mexican shredded cheese
  • 1/2 cup tomatoes, diced
  • 2 tablespoons black olives, sliced
  • 1/2 large green bell pepper, diced

Instructions

  1. Prepare the Ground Beef Mixture: In a non-stick pan, heat 1 tablespoon of oil over medium heat. Add the diced onion and minced garlic, cooking until fragrant and translucent. Add the ground beef and taco seasoning, stirring occasionally, until the beef is fully browned and no longer pink. Remove from heat and set aside.
  2. Preheat the Oven: Preheat your oven to 200°C (400°F). Line two large baking sheets with parchment paper to ensure easy cleanup and prevent sticking.
  3. Crisp the Tortillas: In another pan, heat the remaining 1 tablespoon of oil over medium heat. Place the tortillas in the pan and crisp them on both sides until they turn golden brown and slightly crunchy. This will add a delicious texture to the pizza base.
  4. Assemble the Pizza: On a prepared baking sheet, lay one crispy tortilla as the bottom base. Spread a generous layer of refried beans over it, followed by some of the cooked ground beef mixture. Top with a second tortilla, spread the enchilada sauce evenly, and sprinkle with one-third each of both mozzarella and Mexican shredded cheeses. Leave a small border around the edges to prevent cheese from spilling out. Repeat these layers for the remaining tortillas and ingredients.
  5. Bake the Pizza: Place the assembled pizzas in the preheated oven. Bake for 10-12 minutes or until the cheese is fully melted, bubbly, and slightly golden around the edges.
  6. Add Fresh Toppings: Remove the pizzas from the oven and garnish with diced tomatoes, sliced black olives, and chopped green bell peppers. Optionally, serve with a dollop of sour cream for extra creaminess and flavor.

Notes

  • Be sure to crisp the tortillas well to provide a sturdy, crunchy base that holds the toppings.
  • Adjust the amount of taco seasoning to your taste preference or use a homemade blend for a personalized flavor.
  • Feel free to add other toppings such as jalapeños or green onions for extra spice and freshness.
  • Leftover pizza can be refrigerated and reheated in the oven to preserve crispiness.
  • This recipe can be made vegetarian by omitting the ground beef and adding extra beans or vegetables.
