Instructions
- Prepare Matcha Syrup: In a bowl, whisk together the hot water, matcha powder, and granulated sugar until the mixture is smooth and all sugar is dissolved. Set aside and allow it to cool to room temperature.
- Create Mascarpone Cream: Chill a mixing bowl before whipping. Whip the cold heavy cream until soft peaks form. In another bowl, blend the room temperature mascarpone cheese with powdered sugar and vanilla extract until smooth. Gently fold the whipped cream into the mascarpone mixture until light and airy without deflating the cream.
- Layer Ladyfingers: Break ladyfinger biscuits in half if needed to fit your serving cups. Briefly dip each piece into the cooled matcha syrup—do not soak them—to maintain their texture. Arrange a layer of dipped ladyfingers at the bottom of each cup.
- Add Mascarpone Layers: Spoon a generous layer of the mascarpone cream over the ladyfingers. Repeat the process by dipping and layering a second layer of ladyfingers and mascarpone cream, finishing with a smooth layer of mascarpone on top.
