Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the potatoes evenly and to achieve a crispy texture.
- Mix Sauce: In a large bowl, whisk together olive oil, Dijon mustard, whole grain mustard, honey, minced garlic, salt, and black pepper until smooth and well combined.
- Coat Potatoes: Add the halved baby potatoes to the bowl and toss them thoroughly in the honey mustard mixture to ensure all pieces are evenly coated with flavor.
- Arrange on Baking Sheet: Spread the coated potatoes in a single layer on a parchment-lined baking sheet to allow for even roasting and crispiness.
- Roast Potatoes: Roast the potatoes in the preheated oven for 30-35 minutes, flipping them once halfway through the cooking time to brown all sides evenly.
- Add Rosemary (Optional): If using, sprinkle chopped fresh rosemary over the potatoes during the last 10 minutes of roasting to infuse additional flavor without overpowering.

- If baby potatoes are not available, you can substitute with regular yellow potatoes cut into chunks.
