Description

Delicious and crunchy homemade granola cups perfect for a healthy breakfast or snack. These granola cups are oven-baked with rolled oats, nuts, seeds, and coconut, then filled with creamy yogurt, fresh berries, and a drizzle of nut butter or honey for a beautifully balanced treat.

Ingredients

Scale

Dry Ingredients

  • 2 cups rolled oats
  • 1/2 cup nuts (almonds, walnuts, or pecans), chopped
  • 1/4 cup seeds (sunflower or pumpkin seeds)
  • 1/4 cup shredded coconut (unsweetened)
  • Pinch of salt
  • 1/4 teaspoon ground cinnamon (optional)

Wet Ingredients

  • 1/4 cup maple syrup or honey
  • 1/4 cup coconut oil, melted
  • 1/2 teaspoon vanilla extract

Fillings

  • Greek yogurt, dairy-free yogurt, or coconut yogurt
  • Fresh berries (blueberries, strawberries, or raspberries)
  • Nut butter (peanut butter, almond butter)
  • Drizzle of honey or maple syrup

Instructions

  1. Prepare the Granola Mixture: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease the cups to prevent sticking.
  2. Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, chopped nuts, seeds, shredded coconut, cinnamon if using, and a pinch of salt.
  3. Combine Wet Ingredients: In a separate bowl, whisk together the maple syrup or honey, melted coconut oil, and vanilla extract until smooth and well blended.
  4. Combine Wet and Dry: Pour the wet ingredients into the dry ingredients and stir thoroughly to coat all the dry ingredients evenly, forming a sticky granola mixture.
  5. Shape the Granola Cups: Spoon the granola mixture into each muffin cup, pressing firmly against the bottom and sides to form a bowl shape. Pack the mixture tightly to help it hold together after baking.
  6. Bake the Granola Cups: Place the muffin tin in the preheated oven and bake for 10-12 minutes until the granola is golden brown and crisp. Check frequently to prevent burning.
  7. Cool: Remove the tin from the oven and allow the granola cups to cool completely in the muffin tin to set their shape.
  8. Remove from Tin: Once cooled and hardened, gently remove each granola cup from the muffin tin liners.
  9. Fill the Cups: Fill each granola cup with your preferred filling such as a scoop of Greek or dairy-free yogurt, fresh berries, a drizzle of nut butter, or honey or maple syrup.
  10. Serve: Serve the filled granola cups immediately for best freshness, or store the cups (unfilled) in an airtight container for up to 5 days. If filled with yogurt, refrigerate and consume within a few days.

Notes

  • You can customize the nuts and seeds based on your preference or what you have on hand.
  • Pressing the granola mixture firmly into the muffin tin ensures the cups hold their shape during and after baking.
  • These granola cups can be made vegan by using maple syrup and dairy-free yogurt options.
  • Store unfilled granola cups at room temperature in an airtight container. Fill just before serving to maintain crispiness.
  • Use parchment or silicone liners for easier removal of the granola cups.
