Instructions
- Prepare the Granola Mixture: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease the cups to prevent sticking.
- Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, chopped nuts, seeds, shredded coconut, cinnamon if using, and a pinch of salt.
- Combine Wet Ingredients: In a separate bowl, whisk together the maple syrup or honey, melted coconut oil, and vanilla extract until smooth and well blended.
- Combine Wet and Dry: Pour the wet ingredients into the dry ingredients and stir thoroughly to coat all the dry ingredients evenly, forming a sticky granola mixture.
- Shape the Granola Cups: Spoon the granola mixture into each muffin cup, pressing firmly against the bottom and sides to form a bowl shape. Pack the mixture tightly to help it hold together after baking.
