Ingredients
Scale
Zucchini Boats
- 4 medium zucchinis
Filling
- 1 pound ground turkey
- 1 tablespoon olive oil
- 1 small onion, chopped
- 1 packet (about 1 tablespoon) taco seasoning
- 1 cup diced tomatoes (canned or fresh)
- 1 cup shredded cheese (cheddar or Mexican blend)
Optional
- Sour cream, for serving
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it’s ready for baking the zucchini boats later.
- Sauté Onion: Heat olive oil in a skillet over medium heat. Add the chopped onion and sauté until it becomes translucent and fragrant, about 3-5 minutes.
- Cook Ground Turkey: Add the ground turkey to the skillet and cook thoroughly, breaking it apart with a spatula until browned and no longer pink.
- Add Seasoning and Tomatoes: Stir in the taco seasoning and diced tomatoes, mixing well. Let the mixture cook for another 5 minutes to combine the flavors.
- Prepare Zucchini Boats: While the filling cooks, halve the zucchinis lengthwise and carefully scoop out some of the flesh to create hollow boats, leaving enough zucchini walls to hold the filling.
- Fill Zucchini: Spoon the turkey mixture evenly into each zucchini half, then sprinkle shredded cheese generously on top of each filled boat.
- Bake: Place the filled zucchinis on a baking dish and bake them in the preheated oven for 25-30 minutes, or until the zucchinis are tender and the cheese has melted and turned golden brown.
- Serve: Remove from the oven and serve hot with a dollop of optional sour cream for added creaminess and flavor.
Notes
- You can substitute ground turkey with ground chicken or lean beef if preferred.
- Adjust taco seasoning amount according to your spice preference.
- For extra veggies, consider adding chopped bell peppers or corn to the turkey mixture.
- Using a mix of cheeses like Monterey Jack and cheddar can enhance flavor.
- To save prep time, prepare the filling mixture in advance and refrigerate.
