Chicken and Marinade
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- Juice of 1 lime
Mango Avocado Salsa
- 1 large ripe mango, peeled, pitted, and diced
- 1 ripe avocado, diced
- 1/2 small red onion, finely chopped
- 1/2 red bell pepper, diced
- 1 small jalapeño, seeded and finely chopped
- 2 tablespoons fresh cilantro, chopped
- Juice of 1 lime
- Salt and pepper to taste
Instructions
- Preheat Grill: Preheat your grill to medium-high heat, approximately 400°F (200°C), to ensure it’s hot and ready for grilling the chicken.
- Prepare Marinade: In a small mixing bowl, whisk together olive oil, smoked paprika, ground cumin, garlic powder, salt, freshly ground black pepper, and the juice of one lime until fully blended to create a flavorful marinade.
- Marinate Chicken: Place the chicken breasts in a shallow dish or resealable bag. Pour the marinade over the chicken, making sure each piece is thoroughly coated. Let the chicken marinate for at least 15 minutes to absorb the flavors.
- Prepare Salsa: While the chicken marinates, combine the diced mango, avocado, finely chopped red onion, diced red bell pepper, seeded and finely chopped jalapeño, chopped cilantro, lime juice, salt, and pepper in a medium bowl. Gently toss the ingredients to mix well. Set aside to allow the flavors to meld.
- Grill Chicken: Place the marinated chicken breasts on the preheated grill. Grill each side for 6–7 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Rest Chicken: Remove the grilled chicken from the heat and let it rest for 5 minutes. This allows the juices to redistribute, keeping the chicken moist and tender.
- Serve: Slice the rested chicken breasts and serve them topped generously with the fresh mango avocado salsa for a delicious and colorful dish.
