Instructions

  1. Sauté Onions: Heat olive oil in a large pot over medium heat. Add the diced onion and sauté until soft and translucent, about 3-4 minutes.
  2. Add Garlic: Stir in the minced garlic and cook for an additional 30 seconds until fragrant, being careful not to burn it.
  3. Combine Broth and Spices: Pour in the chicken broth, diced green chilies, fire-roasted diced tomatoes, ground cumin, chili powder, smoked paprika, and oregano. Stir everything together to blend the flavors.
  4. Simmer Soup: Bring the soup to a boil, then reduce heat to low and let it simmer gently for 15 minutes to allow the spices to develop.
  5. Add Chicken and Corn: Stir in the shredded cooked chicken and corn. Continue to simmer for another 10 minutes, or until the soup is heated through.
