Description

A refreshing and easy-to-make Greek Cottage Cheese Salad featuring creamy cottage cheese, juicy cherry tomatoes, crisp cucumber, tangy olives, and feta, all tossed in a light oregano vinaigrette. Perfect as a nutritious side or light lunch with Mediterranean flavors.

Ingredients

Scale

Salad Ingredients

  • 1 cup cottage cheese
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup Kalamata olives, pitted and halved
  • 1/4 cup crumbled feta cheese

Dressing Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon red wine vinegar
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste

Optional Garnish

  • Chopped fresh parsley

Instructions

  1. Combine salad ingredients: In a large bowl, add the cottage cheese, halved cherry tomatoes, diced cucumber, thinly sliced red onion, pitted and halved Kalamata olives, and crumbled feta cheese.
  2. Prepare dressing: In a small bowl, whisk together the extra-virgin olive oil, red wine vinegar, dried oregano, salt, and black pepper until well combined.
  3. Toss salad with dressing: Pour the dressing over the salad ingredients and gently toss everything together to evenly coat the vegetables and cheeses.
  4. Garnish and serve: Sprinkle chopped fresh parsley on top if desired. Serve the salad immediately or chill it in the refrigerator for 10-15 minutes to enjoy a cooler, more refreshing dish.

Notes

  • You can add bell peppers or diced avocado for extra flavor and texture.
  • For a lower-sodium version, use low-sodium cottage cheese and rinse the olives before adding.
  • This salad pairs well with grilled meats, pita bread, or makes a satisfying light lunch on its own.
