Ingredients
Scale
For the Chicken Marinade
- 1 pound boneless, skinless chicken breasts or thighs
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon black pepper
For the Bowls
- 2 cups cooked rice or quinoa
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- ½ red onion, thinly sliced
- ½ cup kalamata olives, pitted
- ½ cup crumbled feta cheese
- ¼ cup chopped fresh parsley
- Optional: tzatziki sauce or hummus for serving
Instructions
- Prepare the Marinade: In a bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper until well combined.
- Marinate the Chicken: Add the chicken to the marinade and toss to ensure all pieces are evenly coated. Cover and let marinate in the refrigerator for at least 20 minutes, or up to 8 hours for more flavor.
- Cook the Chicken: Heat a skillet or grill pan over medium heat. Cook the marinated chicken for 5 to 7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is golden brown.
- Rest and Slice: Remove chicken from the heat and let it rest for 5 minutes to retain juices. After resting, slice the chicken into strips or bite-sized pieces.
- Assemble the Bowls: Divide the cooked rice or quinoa evenly among four bowls. Top each bowl with sliced chicken, halved cherry tomatoes, diced cucumber, thinly sliced red onion, kalamata olives, crumbled feta cheese, and chopped parsley.
- Add Extras and Serve: Add a dollop of tzatziki sauce or hummus to each bowl if desired. Serve the bowls warm or cold according to preference.
Notes
- For easy meal prep, store components like chicken, rice/quinoa, and vegetables separately and assemble just before eating to maintain freshness.
- You can substitute grilled tofu in place of chicken for a vegetarian version.
- Brown rice or couscous are great alternatives as the base grain.
