Instructions
- Preheat the Oven: Preheat your oven to 425°F (220°C) to ensure it’s hot enough for roasting the vegetables evenly and developing caramelization.
- Prepare the Vegetables: Wash all the vegetables thoroughly. Chop the broccoli and cauliflower into florets. Slice the carrots into thin rounds. Chop the red and yellow bell peppers into bite-sized pieces to ensure even cooking.
- Toss with Seasoning: In a large mixing bowl, combine the broccoli, cauliflower, carrots, and bell peppers. Add the olive oil, minced garlic, salt, pepper, dried oregano, and dried thyme. Toss everything together well so that all pieces are evenly coated with the flavorful mixture.
- Roast the Vegetables: Spread the coated vegetables in a single layer on a baking sheet. Roast in the preheated oven for 25-30 minutes, stirring halfway through to promote even cooking and browning until the vegetables are tender and slightly caramelized.
