Ingredients
Scale
Beef Chops
- 4 bone-in or boneless beef chops (about 1 inch thick)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- ½ cup grated parmesan cheese
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon dried thyme (optional)
- 1 teaspoon Italian seasoning
Cheesy Scalloped Potatoes
- 4 large potatoes, peeled and thinly sliced
- 1 cup heavy cream
- 1 cup whole milk
- 2 cups shredded cheddar cheese
- ½ cup grated parmesan cheese
- 1 tablespoon butter
- 1 garlic clove, minced
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 teaspoon fresh thyme (optional, for garnish)
Instructions
- Prepare the Beef Chops: Pat the beef chops dry and season both sides with salt, black pepper, Italian seasoning, and dried thyme if using. In a skillet, heat olive oil over medium-high heat. Add minced garlic and sauté for about 1 minute until fragrant. Place the beef chops in the skillet and cook for about 4-5 minutes per side for medium doneness, or until cooked to your desired level. Remove from heat and sprinkle with chopped fresh parsley and ½ cup grated parmesan cheese. Let the chops rest while you prepare the potatoes.
- Prepare the Scalloped Potatoes: Preheat your oven to 375°F (190°C). Butter a large baking dish. In a saucepan, combine heavy cream, whole milk, minced garlic, salt, and pepper. Heat over medium heat until just warm and fragrant. Arrange half of the sliced potatoes in the baking dish in an even layer. Pour half of the cream mixture over the potatoes and sprinkle with half of the shredded cheddar cheese and parmesan cheese. Repeat with the remaining potatoes, cream mixture, and cheeses, layering evenly.
- Bake the Potatoes: Cover the baking dish with foil and bake in the preheated oven for 40 minutes. Remove the foil and continue baking for an additional 15-20 minutes, or until the potatoes are tender and the cheese is bubbly and golden on top. If desired, sprinkle fresh thyme over the scalloped potatoes as a garnish before serving.
- Serve the Meal: Plate the garlic parmesan beef chops alongside generous portions of cheesy scalloped potatoes. Serve immediately while warm for a delicious, hearty dinner experience.
Notes
- If you prefer your beef chops more well-done, cook them a few minutes longer on each side while monitoring doneness to avoid drying out.
- The dried thyme can be substituted or omitted depending on your herb preferences.
- For a lighter version, you can substitute half-and-half for the heavy cream and milk mixture in the scalloped potatoes.
- Letting the beef chops rest before serving allows juices to redistribute for better texture and flavor.
