Description

A quick and flavorful side dish featuring sautéed zucchini and mushrooms infused with garlic and fresh herbs. This easy-to-make recipe is perfect for a nutritious and delicious addition to any meal.

Ingredients

Scale

Vegetables

  • 2 medium zucchinis, sliced thinly
  • 1 1/2 cups mushrooms, sliced

Other Ingredients

  • 2 tbsp olive oil or butter
  • 3 cloves garlic, minced
  • 1 tsp fresh thyme
  • Salt & pepper, to taste
  • Fresh parsley for garnish

Instructions

  1. Heat oil or butter: In a large skillet, heat the olive oil or butter over medium heat to prepare for sautéing the vegetables.
  2. Cook zucchini and mushrooms: Add the sliced zucchini and mushrooms to the skillet and cook for 5–7 minutes, stirring occasionally until they start to soften.
  3. Add garlic and thyme: Stir in the minced garlic and fresh thyme, cooking for another 2–3 minutes until the garlic is fragrant and the vegetables become tender.
  4. Season and garnish: Season the vegetables with salt and pepper to taste. Garnish with fresh parsley and serve immediately for best flavor and texture.

Notes

  • Use either olive oil or butter based on preference for flavor and dietary needs.
  • Slicing the vegetables thinly ensures they cook evenly and quickly.
  • Fresh herbs can be substituted with dried thyme, but reduce quantity to 1/2 tsp.
  • This side dish pairs well with grilled meats or can be added to pasta or grain bowls.
  • For a vegan option, use olive oil instead of butter.
