Ingredients
Scale
Steak and Seasoning
- 1 ½ pounds flank steak
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Cooking Ingredients
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 4 garlic cloves, minced
- 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)
- 1 tablespoon fresh thyme leaves (or 1 teaspoon dried)
Optional for Serving
- Lemon wedges
- Chopped parsley
Instructions
- Preheat Oven and Prepare Steak: Preheat your oven to 400°F (200°C). Pat the flank steak dry with paper towels to ensure a good sear. Season both sides evenly with salt and black pepper.
- Sear the Steak: Heat a large oven-safe skillet over medium-high heat and add the olive oil. Once the oil is hot and shimmering, sear the steak for 2–3 minutes on each side until a rich brown crust forms.
- Add Garlic Herb Butter: Reduce heat to medium-low. Add the butter to the skillet and let it melt. Stir in the minced garlic, rosemary, and thyme, allowing the flavors to infuse the butter. Spoon the melted garlic herb butter over the steak continuously for about 1 minute to coat it well.
- Roast in Oven: Transfer the skillet with the steak and garlic herb butter to the preheated oven. Roast the steak for 5–8 minutes depending on your desired doneness (5 minutes for medium-rare, longer for medium or well done).
- Rest and Serve: Remove the skillet from the oven and transfer the steak to a cutting board. Let it rest for 5–10 minutes to allow the juices to redistribute. Slice thinly against the grain and serve with optional lemon wedges and a sprinkle of chopped parsley for freshness.
Notes
- For medium-rare doneness, aim for an internal temperature of 130–135°F before resting.
- You may marinate the steak ahead of time to enhance flavor, but it is not necessary.
- Use an oven-safe skillet such as cast iron for best results.
- Resting the steak after cooking is crucial to retain juices.
