Instructions

  1. Preheat Oven: Set your oven to 375°F (190°C) to prepare for baking the lasagna.
  2. Prepare the Shrimp Scampi: In a skillet over medium heat, melt 4 tablespoons of butter. Add minced garlic and sauté until fragrant. Add the shrimp and cook until they turn pink and opaque. Gradually whisk in 4 cups of milk, continuing to stir to avoid lumps. Bring to a gentle simmer until the sauce thickens. Stir in grated Parmesan cheese, ground nutmeg, salt, and pepper. Remove from heat once smooth.
  4. Prepare the Ricotta Mixture: In a bowl, combine 2 cups of ricotta cheese with 1 egg until smooth and well blended.
  5. Assemble the Lasagna: Spread a layer of the white sauce evenly on the bottom of a baking dish. Arrange a layer of cooked lasagna noodles on top. Spread a layer of the ricotta mixture over the noodles followed by a layer of shrimp scampi. Repeat these layers (noodles, ricotta, shrimp) finishing with a final layer of noodles topped with remaining white sauce. Sprinkle 2 cups of shredded mozzarella cheese evenly over the top.

  7. Serve: Remove the lasagna from the oven and let it cool slightly for about 5-10 minutes. Garnish with fresh chopped parsley before slicing and serving.
