- Mix Eggs and Sugar: In a large bowl, whisk together the 2 large eggs and 2 tablespoons granulated sugar until the mixture is foamy and bright yellow.
- Add Milk and Vanilla: Whisk in 1 ¼ cups whole milk and 1 teaspoon vanilla extract until fully combined.
- Incorporate Dry Ingredients: Add 2 cups all-purpose flour, 1 teaspoon baking powder, and ¼ teaspoon salt to the wet ingredients. Whisk just until the batter is smooth with no lumps, being careful not to overmix.
- Prepare for Piping: Transfer the batter into a squeeze bottle or large piping bag. If using a piping bag, place it in a tall glass and fold the top down to make filling easier. Cut an opening about ½ inch wide or slightly wider for squeeze bottles.
- Set Up Frying Station: Arrange a plate or wire rack lined with paper towels nearby to drain the cooked fries once done. This ensures they remain crispy.
- Fry the Batter: Once the oil reaches 375°F, pipe strips of batter directly into the hot oil in a straight line. Fry 5-6 fries at a time to avoid overcrowding, which can lower oil temperature.
- Cook Until Golden: Fry the batter strips for about 1 minute, then carefully flip them using a metal slotted spoon. Continue cooking until both sides are golden brown and crispy.
- Drain Excess Oil: Remove the fries from the oil and place them on the paper-lined wire rack or plate to drain any excess oil.
