Instructions
- Prepare the batter: In a medium bowl, whisk together the flour, baking powder, salt, cinnamon, and 2 tablespoons sugar until well combined.
- Mix the wet ingredients: In another bowl, beat the egg and then whisk in buttermilk (or milk and vinegar mixture) until smooth.
- Combine batter: Gradually pour the wet ingredients into the dry ingredients, mixing gently until just combined to form a smooth batter.
- Prepare apples: Wash, core, and slice the apples into approximately 1/4 inch thick rings. Remove any seeds from the rings carefully.
- Heat the oil: Pour enough oil into a deep pot to reach about 2 inches depth and heat over medium-high until it reaches 350°F (175°C).
- Coat and fry: Dip each apple ring into the batter, allowing excess to drip off, then carefully place them into the hot oil. Fry in batches to avoid overcrowding.
- Cook until golden: Fry the apple rings for about 2-3 minutes on each side or until golden brown and crisp.
- Drain and coat with cinnamon sugar: Using a slotted spoon, remove the fried apple rings and drain them on paper towels. While still warm, toss them in a mixture of 1/2 cup white sugar and 1/2 teaspoon cinnamon until evenly coated.
