Ingredients
Scale
Dry Ingredients
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon ground nutmeg
- 1/2 teaspoon salt
Wet Ingredients
- 1 cup eggnog
- 1/2 cup sugar
- 2 large eggs
- 1/2 cup butter, melted
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C) to ensure it’s at the right temperature for baking the muffins evenly.
- Mix Dry Ingredients: In a large bowl, combine the all-purpose flour, baking powder, ground nutmeg, and salt. Stir them together so that the leavening and spices are evenly distributed.
- Combine Wet Ingredients: In a separate bowl, whisk the eggnog, sugar, eggs, and melted butter until well blended and smooth. This will provide moisture and flavor for the muffins.
- Combine Wet and Dry Mixtures: Gradually add the dry ingredients into the wet ingredients, stirring gently until just combined. Be careful not to overmix to keep the muffins tender.
- Prepare Muffin Tin: Fill muffin cups about two-thirds full with the batter. This allows space for the muffins to rise without overflowing.
- Bake the Muffins: Place the muffin tin in the oven and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean, indicating they are fully cooked.
- Cool Before Serving: Remove the muffins from the oven and allow them to cool in the pan for a few minutes before transferring to a wire rack. Let them cool completely or serve warm as preferred.
Notes
- Be careful not to overmix the batter to avoid dense muffins.
- You can sprinkle a little cinnamon sugar on top before baking for extra flavor.
- Substitute butter with a non-dairy alternative for a dairy-free version.
- These muffins pair wonderfully with coffee, tea, or more eggnog!
- Store leftovers in an airtight container at room temperature for up to 3 days.
