Description

A quick and flavorful Easy Thai Noodles recipe combining tender linguini with a savory, slightly spicy sesame-soy sauce, fresh vegetables, and optional shredded rotisserie chicken for protein. Perfect for a nutritious lunch or dinner served warm or cold.

Noodles and Vegetables

  • 6 ounces linguini noodles
  • 1 cup bagged coleslaw mix
  • 1/2 cup shredded carrots
  • 1/3 cup chopped cilantro (divided)
  • 1/4 cup chopped green onions (divided)

Protein and Toppings

  • 2 cups shredded rotisserie chicken (optional, but highly recommended)
  • 1/3 cup chopped honey roasted peanuts (divided)

Sauce

  • 1/4 cup low sodium soy sauce
  • 2 tablespoons honey
  • 2 tablespoons sesame oil
  • 4 cloves minced garlic
  • 1/2 teaspoon red pepper flakes (adjust to taste)


Instructions

  1. Cook the noodles: Cook linguini noodles according to the package instructions. Once done, drain the noodles thoroughly and set them aside.
  2. Prepare the sauce: While the noodles are cooking, whisk together soy sauce, honey, sesame oil, minced garlic, and red pepper flakes in a small bowl until well combined.
  3. Toss noodles with sauce and vegetables: Pour the prepared sauce over the drained noodles and toss to coat evenly. Add the bagged coleslaw mix, shredded carrots, and half of the chopped cilantro to the noodle mixture and stir gently until all ingredients are combined.
  4. Add toppings and protein: Gently fold in half of the chopped green onions and half of the chopped peanuts, reserving the remaining for garnish. If using, add the shredded rotisserie chicken now and incorporate it evenly.
  5. Serve and garnish: Serve the Thai noodles warm or cold according to your preference. Garnish with the remaining chopped cilantro, green onions, and honey roasted peanuts just before serving for added freshness and crunch.

  • For a vegetarian version, omit the rotisserie chicken or substitute with tofu.
