Description

Easy Kimchi Noodles is a quick and flavorful Korean-inspired dish featuring tender noodles tossed in a spicy, tangy kimchi sauce with gochujang and soy. This vegetarian recipe combines savory, spicy, and slightly sweet flavors with the crunch of green onions and toasted sesame seeds, making it perfect for a satisfying main course ready in just 20 minutes.

Ingredients

Scale

Main Ingredients

  • 8 oz noodles (ramen, soba, or rice noodles)
  • 1 tablespoon sesame oil
  • 1 cup chopped kimchi (with some juice)
  • 1 tablespoon gochujang (Korean chili paste)
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 1 clove garlic (minced)
  • 2 green onions (sliced)
  • 1 teaspoon toasted sesame seeds

Optional Toppings

  • 1 fried egg
  • Sliced cucumber
  • Nori strips

Instructions

  1. Cook Noodles: Cook the noodles according to the package instructions until al dente. Drain the noodles well and set aside to keep warm.
  2. Heat Oil and Garlic: In a large skillet or wok, heat 1 tablespoon of sesame oil over medium heat. Add the minced garlic and cook for about 30 seconds, stirring frequently, until fragrant but not browned.
  3. Cook Kimchi Sauce: Stir in the chopped kimchi along with some of its juice, 1 tablespoon gochujang, 1 tablespoon soy sauce, and 1 teaspoon sugar. Cook this mixture for 2 to 3 minutes until heated through and slightly caramelized, which will develop the deep flavors.
  4. Toss Noodles: Add the cooked noodles to the skillet and toss thoroughly to coat the noodles evenly in the kimchi sauce. Stir-fry for an additional 1 to 2 minutes until the noodles are hot and well combined with the sauce.
  5. Garnish and Serve: Remove from heat and garnish with sliced green onions and toasted sesame seeds. Serve immediately with optional toppings such as a fried egg, sliced cucumber, or nori strips for extra texture and flavor.

Notes

  • Adjust gochujang quantity to suit your preferred spice level.
  • For a saucier dish, add 2–3 tablespoons of water or broth when tossing the noodles.
  • This recipe is great for using up leftover noodles and can be enjoyed warm or cold.
  • Use egg-free noodles and kimchi without fish sauce to keep the dish vegetarian.
