Description

This Easy Italian Chicken and Potatoes recipe offers a simple yet flavorful meal featuring crispy bone-in chicken thighs paired with tender, herb-seasoned potatoes. Perfect for a comforting dinner, this dish utilizes classic Italian herbs like oregano, basil, and thyme to create a savory and aromatic experience that the whole family will enjoy.

Ingredients

Scale

Chicken and Potatoes

  • 4 bone-in, skin-on chicken thighs
  • 4 medium potatoes, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste
  • 1/2 teaspoon paprika (optional, for added color and flavor)
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven: Set your oven to 400°F (200°C) to prepare for roasting the chicken and potatoes to a perfect crisp.
  2. Prepare the potatoes: In a large bowl, toss the cubed potatoes with 1 tablespoon of olive oil, half the garlic powder, onion powder, dried oregano, dried basil, dried thyme, paprika, salt, and pepper to ensure even coating.
  3. Season the chicken: Pat the chicken thighs dry with paper towels. Rub them with the remaining olive oil and sprinkle the remaining garlic powder, onion powder, dried herbs, salt, and pepper evenly over the skin.
  4. Arrange in baking dish: Spread the seasoned potatoes in a single layer in a roasting pan or large baking dish. Place the chicken thighs skin-side up on top of the potatoes.
  5. Roast the dish: Roast in the preheated oven for about 35-40 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are tender and golden. Halfway through cooking, stir the potatoes gently to ensure they roast evenly.
  6. Garnish and serve: Remove from the oven and sprinkle fresh chopped parsley over the top before serving to add a burst of color and fresh flavor.

Notes

  • Bone-in, skin-on chicken thighs provide the best flavor and crispy skin.
  • Cut potatoes uniformly to ensure even cooking.
  • Use a meat thermometer to verify chicken is fully cooked for safety and juiciness.
  • Optional paprika adds a smoky color and slight sweetness.
  • If you want a spicier dish, consider adding red pepper flakes.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven for best texture.
