Scale
Beans and Liquids
- 2 cups cooked pinto beans, drained and rinsed
- 1/2 cup vegetable broth or bean cooking liquid
- 1 tablespoon lime juice (optional)
Vegetables and Aromatics
- 1/2 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons fresh cilantro, chopped (optional)
Spices and Oils
- 2 tablespoons olive oil or lard
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt, plus more to taste
- 1/4 teaspoon black pepper
Instructions
- Sauté the aromatics: Heat the olive oil or lard in a skillet over medium heat. Add the finely chopped onion and cook for about 4 to 5 minutes until softened and translucent.
- Add garlic and spices: Stir in the minced garlic, ground cumin, and chili powder, cooking for an additional minute until fragrant to enhance the flavors.
- Combine beans and liquid: Add the cooked pinto beans and vegetable broth (or bean cooking liquid) to the skillet. Stir to evenly combine with the aromatics and spices.
- Mash the beans: Using a potato masher or the back of a spoon, mash the beans to your preferred consistency, whether chunky or smooth.
- Simmer to thicken: Continue cooking and stirring the mashed beans for 5 to 7 minutes until they reach a thick and creamy texture.
- Season and serve: Season with salt and black pepper to taste. Optionally stir in lime juice and chopped cilantro for added brightness and fresh flavor, then serve warm.
Notes
- For an extra smooth texture, use an immersion blender to puree the beans.
- Add more vegetable broth if the beans become too thick during cooking.
- Try substituting black beans for a tasty variation.
- Sprinkle shredded cheese over warm beans for added richness.
