Description

This Easy & Hearty Cabbage and Ground Beef Skillet is a comforting one-pan meal perfect for busy weeknights. Ground beef is browned with aromatic onions and garlic, then simmered with fresh cabbage, diced tomatoes, and fragrant spices until tender. With simple ingredients and minimal prep, this low-carb, gluten-free dish offers a satisfying blend of flavors and textures that are both nutritious and delicious.

Ingredients

Scale

Meat and Vegetables

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/2 head green cabbage, chopped (about 4 cups)

Others

  • 1 tablespoon olive oil
  • 1 can (14.5 oz) diced tomatoes with juice
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup beef broth or water
  • Chopped parsley for garnish (optional)

Instructions

  1. Prepare the Base: Heat olive oil in a large skillet over medium heat. Add the diced onion and sauté for 2–3 minutes until softened and translucent.
  2. Add Garlic: Stir in the minced garlic and cook for another 30 seconds to release its aroma without burning.
  3. Brown the Beef: Add the ground beef to the skillet, breaking it up with a spoon. Cook until fully browned and no longer pink. Drain excess fat if necessary to keep the dish lean.
  4. Add Vegetables and Seasoning: Mix in the chopped cabbage, canned diced tomatoes with their juice, smoked paprika, dried thyme, salt, black pepper, and optional red pepper flakes. Stir everything together well.
  5. Simmer: Pour in the beef broth or water to add moisture. Cover the skillet and cook for 10–12 minutes over medium heat, stirring occasionally, until the cabbage softens and flavors meld.
  6. Reduce Liquid: Remove the lid and cook uncovered for an additional 2–3 minutes to evaporate excess liquid, achieving the desired consistency.
  7. Garnish and Serve: Sprinkle chopped fresh parsley on top if desired, then serve the dish hot as a fulfilling main course.

Notes

  • For a lower-carb option, use diced tomatoes without added sugar.
  • You can substitute ground beef with ground turkey or chicken for a leaner version.
  • Red pepper flakes are optional and can be adjusted for desired spiciness.
  • Leftovers keep well in the refrigerator for up to 3 days and reheat nicely on the stovetop or microwave.
