Description

Easter Birds Nest Cookies are delightful no-bake treats perfect for spring and Easter celebrations. Crispy chow mein noodles are coated in a melted mixture of milk chocolate, butterscotch chips, and peanut butter, then shaped into nest-like mounds and topped with colorful candy eggs. These festive cookies offer a crunchy texture with a sweet, creamy flavor and make a charming addition to any holiday dessert table.

Ingredients

Scale

Chocolate Mixture

  • 1 cup milk chocolate chips (180g)
  • ½ cup butterscotch chips (90g)
  • 2 tablespoons creamy peanut butter (40g)

Main

  • 2½ cups chow mein noodles (150g)
  • 36 candy eggs (such as mini chocolate eggs)

Instructions

  1. Melt Chocolate Mixture: In a large microwave-safe bowl, combine the milk chocolate chips, butterscotch chips, and peanut butter. Microwave in 30-second intervals, stirring well after each, until the mixture is fully melted and smooth with no lumps.
  2. Coat Noodles: Gently fold the chow mein noodles into the melted chocolate mixture until all the noodles are evenly coated, ensuring a crunchy texture throughout.
  3. Form Nests: Spoon the coated mixture into muffin tins or onto a parchment-lined baking sheet. Shape the mixture into nest-like mounds using the back of a spoon or your fingers to create indentations for the eggs.
  4. Add Candy Eggs: While the chocolate mixture is still soft, place 3 candy eggs on top of each nest, pressing them gently so they stick without sinking in.
  5. Chill to Set: Refrigerate the nests for at least 30 minutes or until the chocolate mixture is firm and fully set.
  6. Serve: Once set, carefully remove the nests from the muffin tins or baking sheet. Serve immediately or store in an airtight container until ready to enjoy.

Notes

  • For a nut-free version, substitute peanut butter with sunflower seed butter or skip it altogether.
  • Use any favorite candy eggs or small candies for decorating the nests.
  • Ensure thorough stirring during melting to avoid burning the chocolate.
  • Store nests in a cool place or refrigerator to prevent melting, especially in warm climates.
  • These cookies are best enjoyed within 3-4 days for optimal freshness.
