Instructions
- Preheat the Oven: Set your oven to 400°F (200°C) and line a baking sheet with parchment paper to prepare for baking the potatoes.
- Boil the Potatoes: Place peeled and cubed potatoes into salted boiling water and cook for 15-20 minutes until tender. Drain thoroughly and return to the pot for mashing.
- Mash and Mix Ingredients: Mash the cooked potatoes until smooth. Stir in the unsalted butter, heavy cream, egg yolks, salt, pepper, and optional nutmeg until the mixture is creamy and well combined.
- Pipe the Potatoes: Transfer the potato mixture to a piping bag fitted with a star tip. Pipe elegant swirls onto the prepared baking sheet, spacing them comfortably apart.
- Apply Egg Wash: Beat the whole egg, then lightly brush it over the tops of the potato swirls to create a beautiful golden crust once baked.
