Dredging Mixture
- 1 cup Plain Flour
- 1 teaspoon Rock Salt (adjust to taste)
- 1 teaspoon Toasted Garlic Salt
- 1 teaspoon Smoked Paprika (star seasoning)
- 1 teaspoon Fresh Cracked Pepper
Main Ingredients
- 10 pieces Sardines (fresh and butterflied)
- 3 tablespoons Extra Virgin Olive Oil (high-quality oil recommended)
- 2 pieces Lemon Wedges (for zest)
- 2 tablespoons Parsley (chopped, for garnish)
Instructions
- Preparation: Gather all ingredients and prepare your cooking station by mixing the flour and seasonings.
- Mix Seasoning: In a plastic bag or box, combine the plain flour, rock salt, toasted garlic salt, smoked paprika, and fresh cracked pepper thoroughly.
- Coat Sardines: Add sardines one or two at a time into the bag or box and gently shake to coat evenly with the seasoned flour mixture. Remove and shake off excess flour from each sardine.
- Heat Oil: Heat the extra virgin olive oil in a frying pan over medium heat for about 2 to 3 minutes until hot but not smoking.
- Fry Sardines: Place sardines skin-side down in the hot oil. Fry for 1 to 2 minutes until the skin is crispy and golden brown. Flip the sardines and cook the other side for about 1 minute until cooked through.
- Drain and Plate: Remove the sardines from the pan and place them on paper towels to drain excess oil. Then, transfer them to a serving plate.
- Garnish and Serve: Sprinkle chopped parsley over the sardines and serve immediately with lemon wedges on the side to add a fresh, zesty flavor.
Notes
- Use fresh sardines for the best flavor and texture.
- Adjust salt levels according to your taste preference.
- Ensure the oil is hot enough before frying to get a crispy crust without absorbing too much oil.
- Serve immediately to enjoy the optimal crispiness.
- Lemon wedges enhance the taste by adding brightness and cutting through the richness.
